All About Potatoes: You Love it, We Love it. [Part 2]

In the previous article, we mentioned about the differences between the potato and the sweet potato. In this article, we will be discussing the differences between the various flesh colours of the sweet potato.

Sweet potato comes in various flesh colours (note: flesh colour, not the skin!), mainly – white, yellow, orange, and purple.

  • Contains the least beneficial nutrients
  • Rich in beta-carotene (Vitamin A)
  • Rich in Vitamin C
  • Contains the most anti-oxidants
  • High in Vitamin A, C, and manganese

 

Besides choosing the type of sweet potato, it is important to also use an appropriate cooking method to get the beneficial nutrients. The skin of the sweet potato contains fibre, as well as vitamin C, and some vitamin B. Hence, consuming the sweet potato without the skin would mean that you’re not getting the vitamins from the skin. On top of that, boiling the sweet potato causes the vitamins from the sweet potato to leach into the water, losing those vitamins. Hence, to keep the vitamins, baking a sweet potato with its skin on is the best way to consume its vitamins.
