VHalia Carrot Cake

Ingredient A:

– 1 cup all purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon of baking soda

– 1/2 teaspoon of fine salt

– 1 1/4 teaspoon cinnamon powder

– 3 tbsp of GoodMorning VHalia

Ingredient B:

– 2 eggs (Grade A)

– 3/4 cup corn oil

– 1 cup of castor sugar – I use ½ cup

Ingredient C:

– 1 1/4 cup grated carrot

– 3/4 cup walnut or fried peanut – coarsely chopped

– ½ cup crushed raisins

Methods:

  1. Mix Material B in the mixer. Beat until fluffy.
  2. Add Ingredients A and beat briefly until well combined.
  3. Add Material C use a spatula and stir well.
  4. Bake for 50 minutes or until cooked through.

 

Frosting Cream Cheese

Ingredient:

– 70 g of unsalted butter – left to soft at room temperature

– 125 g cream cheese – let it cool to room temperature

– 1 cup of vanilla ice cream

– 1 1/2 cups of icing sugar sifted

– 1 teaspoon of lemon sunquick / lemon juice – if wanted slightly sour

Method:

  1. Beat butter and cream cheese until fluffy.
  2. Add vanilla essence icing sugar and lemon juice.
  3. Beat again until smooth. Ready and can be rubbed on a cold cake.
