Pandan Ginger Muffin (Recipe from Chef Dato’ Fazley Yaakob)

Muffin-Pandan-Halia

Ingredients:

190g flour

70g VHalia

2 eggs

1 ½ teaspoon baking powder

1 ½ teaspoon baking soda

60g castor sugar

60g brown sugar

200ml coconut milk

100ml vegetable oil

1 teaspoon pandan essence

1 sudu kecil perisa pandan

Almond flakes

 

Methods:

  1. Preheat oven to 180c.
  2. Mix all the dry ingredients in a mixing bowl until even.
  3. Mix all the wet ingredients in a separate mixing bowl.
  4. Mix both bowls together until even.
  5. Pour the batter into the muffin cup sprinkle some almond flakes on it.
  6. Bake the muffins for 15 minutes or until they are cooked in the oven at 180c.
